Finding a decent butcher’s shop can be quite the challenge, but one of Dorset’s finest can be found in Cheap Street, Sherborne
Established in 1840, J&M Parsons is a truly traditional butchers. Whilst the onsite slaughter house is no longer in operation the butchery skills required have not been lost, so whether you require a traditional cut or something more ‘in vogue’, Parsons know what to do.
Parsons are committed to a ‘farm to fork’ attitude and the beef, lamb and pork are all sourced locally and can be traced back to the farm they were reared so finding out the age, breed and even what was on their menu is easy! The shop is also renowned for their famous ‘Sherborne Sausages’ which are a must try and are made to a closely-guarded secret recipe!
Delicious game arrives from the local shoot in the season and they can cater to the more exotic taste and take all sorts of special orders! After a rabbit? They will get you one. They can readily supply trotters, ears and offal and if you’re planning a party and require a saddle of lamb or a suckling pig they can source it!
Part of the secret to good meat is how long it is hung and here is where you can taste the difference between a good butchers and a supermarket and Parsons dry-aged beef is some of the best around!
My favourite is ‘Sherborne Snags’ and buttery mustard mash with lashing of onion gravy. Delicious!
